MUFFINS
Chocolate, Cranberry and Walnut Muffins ¼ cup butter or
non-hydrogenated margarine 1/3 cup light brown sugar Finely grated zest
and juice of one orange 1 egg beaten 2-¼ cups whole-wheat flour
2 tablespoons unsweetened cocoa 1-tablespoon baking powder 1-teaspoon
baking soda ¾ cup low fat or 2% milk ½ cup dried cranberries
2 tablespoons chopped walnuts Cream the butter or margarine, sugar and orange
zest together in a large bowl until light and fluffy. Whisk the egg
until frothy and add to the creamed mixture a little at a time, mixing well.
Combine the flour, cocoa powder, baking powder and baking soda, and stir
into the creamed mixture. Add the orange juice and milk then stir in the dried
cranberries and walnuts. Spoon into greased muffin cups and bake in a
preheated oven at 400° for 25 minutes, until well risen and firm to the
